At the end of the day both CPU and RAM are important were the only issue is a matter of budget.  Meaning how much are you willing to spend upgrading your machine?

So using more than 16Gb of RAM only becomes an issue if you’re running large-scale projects, such as multiple instances of Kontakt Libraries.

In reality most music producers don’t do this. Instead they rely on software synthesizer and audio plugin which make use of CPU speed rather than RAM.
